Instructions

Prep and Combine: Preheat your oven to 180°C. In a medium gourmet roaster or large ovenproof casserole dish, combine the extra lean beef goulash cubes, peeled whole tomatoes, chopped onion, beef stock, olive oil, lemon juice, and stevia sweetener.

Season: Add the salt, pepper, cinnamon, ginger, thyme, chilli sauce, whole cloves, and parsley stems to the dish. Stir everything thoroughly to ensure the spices are evenly distributed.

Bake: Cover the dish securely with its lid and place it in the preheated oven. Bake for 90 minutes until the beef is beautifully tender and the sauce has rich, deep flavors.

Cook the Rice: While the stew is baking, bring a pot of salted water to a rolling boil. Add the dry white rice and cook until tender, then drain thoroughly and set aside.

Steam the Veg: Place the everyday mixed vegetables in the microwave and steam for 5–6 minutes until vibrant and tender.

Assemble: To serve, dish up a bed of fluffy white rice and steamed mixed vegetables, then ladle the rich tomato beef stew over or alongside them.

Chef's Notes

Meal Prep & Storage: This stew tastes even better the next day as the flavors deepen! Divide the stew, rice, and vegetables equally into 4 airtight containers. Store in the fridge for up to 4 days.

Freezer Instructions: The beef tomato stew freezes beautifully on its own. Let it cool completely before transferring it to a freezer-safe container or bag for up to 3 months. Thaw overnight in the fridge and reheat on the stove or in the microwave. For best results, prep the fresh rice and steamed vegetables on the day of eating.
