Instructions

Air-Fry the Chicken: Season both sides of the chicken fillets with Portuguese seasoning, garlic, and salt. Cook in the air fryer until golden and fully cooked through, then shred the meat using two forks.

Prepare the Slaw: In a mixing bowl, combine the rainbow coleslaw mix with the fat-free cottage cheese, Low-Fat Plain Yoghurt, lite mayo, and a fresh squeeze of lemon juice. Toss until the vegetables are thoroughly coated.

Assemble: Lay the wheat wrap flat and spread a generous bed of the creamy coleslaw mix down the center. Top with the shredded Portuguese chicken.

Toast: Fold the wrap tightly and place it in the air fryer. Cook at 200°C for a few minutes until the exterior is golden and crisp.

Finish: Drizzle with the plain yoghurt before serving for extra creaminess.

Chef's Notes

Anti-Soggy Tip: For the best crunch, ensure your shredded chicken and coleslaw are cold when you assemble the wrap. This prevents steam from building up inside the wrap during the final toasting phase.

Meal Prep Friendly: You can air-fry and shred the chicken up to 3 days in advance. Store it in an airtight container in the fridge alongside a pre-mixed portion of the slaw for a 5-minute assembly.

Travel Notes: This wrap is an excellent “grab-and-go” lunch. If you plan to eat it later, wait to toast it until you are ready to eat, or enjoy it cold as a refreshing chicken salad wrap.

Flavor Boost: The combination of cottage cheese and lite mayo creates a rich, creamy texture that mimics traditional high-fat dressings while significantly boosting the protein content.
